Best Breakfast Casserole Ever
Ingredients
1 (32 ounce) package frozen hash browns
8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese
1 cup grated Parmesan cheese
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
2. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.
Substitute different meats, "cream of" soups, cheeses. Add veggies: peppers, mushrooms, get creative.
Some ideas:
Use seasoned hash browns, add diced chilis
Substitute bacon for ham, use cream of mushroom roasted garlic soup, add additional mushroom
Use 1c pepper-jack cheese, 1c cheddar, add chopped green and red bell peppers .
.....add spices, garlic powder, ground mustard, Old Bay Seasoning, raid your spice rack!
.....try different toppings: crushed cornflakes, french fried onion, whatever you have in the pantry.
Have fun and experiment with this recipe.
Be bold, and might forces will come to your aid..... or at least to breakfast!

Holy moley! That's a casserole that should serve as breakfast, lunch AND dinner! But if you're having brunch, then the calories don't count (not true, I just made that up). Great recipe.
Excellent recipe! Thanks for sharing! We've had several early morning meetings at work where they have purchased casseroles similar to this from a local place and they are very filling. You just need a little square of it about the size of a piece of birthday cake at kid's party. Good stuff!

This sounds really good. I love to cook. I would instead add bacon for an extra flavor booster cause i dont really like ham and Cream of Mushroom is always good to be added
LAS--True, but I've found that the cream of potato gives it a richer flavor, try one can of that and one can cream of mushroom.. mmm...golden mushroom..
i've had this! It is great for those "bring a dish" type mom's things. Yum!
